A challenging new opportunity has arisen for an experienced Head Chef/Manager.
The Menu is Modern European using 95% freshly prepared ingredients with only labour intensive products bought in. The menu is developed Centrally following a series of Chef meetings to look at recipes, presentation and ideas. You will have full input and development of your own “specials Menu” which can change daily to support your GP and keep the dishes interesting for regular customers.
You need to have a solid background in quality dining where standards and compliance back of house are paramount to the success of the kitchen. This business is busy and will turnover £35k per week minimum. If you have worked in a kitchen where 200 covers over the pass is normal for weekend trade you will adapt to this well.
This is a chance to show your organisational skills and management qualities to manage a large kitchen team and budget. Being Organised is an essential quality and therefore you will be structured and time aware to achieve all your goals. Deadlines are second nature to you.
Objectives
To effectively manage the back of house team, ensuring that the kitchen is run to the companies financial and operational standards whilst adopting the company ethos and style.

• Ability to work flexibly under pressure. Always up for a challenge
• A good sense of humour and enjoy your work.
• Good eye for detail and confident working within budgetary and financial constraints
· Commercially aware and able to train good disciplines for housekeeping: wastage in all areas from food to disposables, chemicals etc
· Commercially aware and able to develop competent Chefs who produce quality food first time and every time following correct controls on portions and garnish
· Commercially aware to develop specials that support GP achievement in a structured kitchen
· Commercially aware to recruit a sound team within labour budget and manage staffing within company guidelines
• Excellent people skills and able to manage a large team.
• A passion to cook great food and have respect for fresh produce.
